I use EZDRUMMER2 and I have to go to Akai Editor to match the cc# of the drum I want to the pad. Now with presets I have 4 drum kits set up just the way I like. I have an Akai LPD8 and have no issues with midi control. Have you checked in the Akai Editor? It kind of sounds like you have it switched to toggle instead of other so when you turn it just goes to the extreme.
