When you recorded the track you should have armed it for stereo.The tracks single tracks can record in stereo and this is required if you want to pan.

When you,"Armed" the track for recording did you choose Mono or Stereo left Stereo Right or Full stereo?

You may have just recorded the vocal on one side of the stereo track as each track in Mixcraft can record stereo tracks.
