If you're looking for true mono just pan all the way so that it's only on one side. The basic version of Amplitube is free and all of your purchases will be carried over, nicer interface for sure.

When recording a mono signal you want to select either L or R and pan accordingly. Have you tried the new Amplitube 5 yet? New interface, upgraded gear, etc, it's nice. I bought the Fender pack years ago and it's even better now.

#17 and #19 can be found in a bunch of other amp sims out there, there are free of course but it seems the better ones do cost. I use Amplitube, they just came out with v5 which is really nice. It comes with a few amps and limited routing for free but can be upgraded piecemeal or all at once. There ...

There's also a little + in the header of the track that will show you the child tracks of the drums so you can have separate drums on separate child tracks. If that's what you're referring to.

I'd highly recommend everyone taking a few minutes watching task manager just after a reboot and keep an eye out for anything unusual. Any instrument should play any midi file, you should just be able to switch instruments like you normally would.

Have you tried scanning plugin folders from MC settings, under plugins? Also, sometimes the installer will make it's own folder but usually has something like vst in the title, you can put the directory in manually.
