There are dozens of free tools that do a good job of ripping CDs. I don't see much advantage to having this available inside your DAW. I use Foobar 2000: http://www.foobar2000.org/

Yes. According to the specs, this mixer includes a "bi-directional 18 x 18 USB interface". You may or may not be able to record 18 tracks simultaneously, but that would be a limitation of the USB 2.0 ports and driver on your computer, not a limitation of the mixer. Regardless, it will work...

One last comment/question. What is the peak level of the guitar part BEFORE normalization? That will tell us how much gain the normalization process adds to the signal. My guess is that you should be sending a hotter signal into Mixcraft. It doesn't hurt to use more legible level meters than the one...

When you are monitoring while recording through plugins that introduce delay, there's no way to get rid of latency completely. But you can usually reduce it to a tolerable amount.
