Re: How does a MIDI file know what sound to play?
Hi & welcome to the forum.
Midi is a whole new world which can take quite a while to get your head round .. I still have trouble.
I have uploaded a copy of the book I use when stuck. It's well worth a read
.. The MIDI Manual

Re: Good interface to buy
I'm not sure how good the interface side of it is but I own and older Zoom 707 ii and have found it very good. This is the latest version which looks quite good ... http://www.gear4music.com/Guitar-and-Bass/Zoom-G3X-Guitar-Multi-Effects-Pedal-And-USB-Audio-Interface/MYU?origin=product-ads&utm_ca...

I have also thought about this. There are 4 basic sections to an orchestra: Percussion, Strings, Reeds.Woodwinds, and Brass. Sorry but that made me chuckle    An inspirational piece that still takes me back to primary school is Peter And The Wolf https://www.youtube.com/watch?v=MfM7Y...

And a very nice 'go' you gave it.
As long as you can have fun with the basics, it should inspire you to delve deeper under the bonnet. A theory which certainly works for Mixcraft.
I look forward to hearing more as you progress

Re: Drum roll... please.
How to cheat .. but it works.
Find the drum rolls you want in pre-existing midi files. Open them in MC, isolate them, then save them for tweaking
Edit: I've just noticed Mab098157 has already suggested it

If you go to the Preferences section and select Control Surfaces, in the drop down tab there's a list of mapped Controllers which should work very well
