I know you can edit individual midi controller data, ie: volume, pan, expression, pitch, etc. But is there a way to delete all controller data on a midi track, leaving just "note on/note off commands, without pulling up each command separately?
I've noticed on (some) midi tracks there is a right click option to turn all controllers off but I don't see that option as doing anything when it does appear.

There's no option to do that. You could probably find some kind of MIDI CC data stripping app out there.
Or, just do them one at a time.
