I'm wondering what you Mixcraft use for recording guitars: live to amp, some particular VST, Mixcraft VSTs , other.....

This will of course be personal preference and choice. But for me (and I record a lot of guitars as a home hobbyist) ...
1. I never record from a mic'ed amp - it eliminates all room noise and other hassles straight away. So always D.I. into my Focusrite 2i2.
2. There are several options for tone shaping within Mixcraft. Just hit the track FX button and in the 'select effect chain' dropdown there are some presets there. Mixcraft also has the Shredamp simulator - type 'shed' into the search bar on the FX box.
3. There are free amp sims - one I like and have used is Blue Cat's free amp. https://www.bluecataudio.com/Products/Product_FreeAmp/
4. I also have paid VST's like Toontrack's EZMix and EchoBoy from Sound Toys.
Lately, my 'signature sound' is just my guitar D.I., TB Compressor and EchoBoy with the 'pleasant Memories' preset.

Guitar outputs are pretty much unbalanced so they use TS cables. If the DI on the amp is basically just routing the signal directly from the guitar without a preamp or any other electronics it is probably TS also. Check your amp; if it has noise cancelation or signal shielding before it reaches the DI then the amp output might be TRS.
The input on the focusrite might be balanced (TRS) but it makes no difference if the source is unbalanced so I would say TS.
